Freezing Fresh Tomatoes, Step by Step 

Some types that freeze well are Roma, beefsteak, and any other hard type. Stay away from any that have spots or flaws on them.  

Run cold water over the tomatoes on multiple occasions to get rid of any dirt or dust.  

Put them in boiling water for 30 to 60 seconds, or until the skins begin to split. This step makes it easier to peel the tomatoes later.  

This stops the food from cooking and helps keep its colour and texture. After a while, take them out of the ice water and let them cool down.  

The skins should come off easily once they're cool. You can use a cutting knife to help you get rid of any skins that won't come off.  

Based on what you want to do with them afterwards, you can leave them whole, cut them in half, or chop them up.

Fill the bags with as little air as possible before you seal them. This will help keep food from getting freezer burn. You can use a vacuum sealer, but you can also just press the air out by hand.

Write the date and what's inside each bag or package very clearly. Right after that, put them in the freezer.
